The two cheeses are essentially identical - the main difference is size. Brie is typically made in one, two, three and 6-pound wheels. Camembert is always sold as an 8-ounce disk. The rind of the cheese is referred to as a bloom rind (the white velvety mould is called penicillium candidum). These cheeses age from the outside-in, and can be very yeasty tasting and firm when young. As they age they develop funkier mushroom flavors, and become creamy and luxurious in texture. They are sold in the characteristic wooden boxes, which were introduced to protect the cheese during transportation between the French country side and Paris. Some exceptional brands are Brie de Nangis, Brie de Mieux, and Camembert Châtelain.
Thanks for the informative post. Who knew that even though they are similar in characteristics and taste, they differed a lot from creation.

I don't mean to be snobby, but it's spelled "Brie de meaux"
Very nice site!

Has this world been so kind to you that you should leave with regret? There are better things ahead than any we leave behind.

Hi, i live in thailand and recently went to two buffets, international ones. Both buffets had untasty brie/camabert (i am not sure which one it was). When i bit into the cheese it was almost rubbery all the way through and lacking luster, to say the least. What is your opinion of this?
Before these two experiences i didn't know brie or camabert could actually not be tasty
love the cheese

I was wondering about this....when i went to the store the nutrition facts, and ingredients on both were identical as well as the 8 ounce circle but i think after trying both i prefer brie.
