Soy cheese is made from soy milk, which is curdled into tofu and pressed and aged into soy cheese blocks. The cheese is packed with all kinds of colorings, flavorings and salt to get it to resemble the dairy cheeses it sets out to imitate (everything from mozzarella to parmesan). Vitamins and minerals that occur naturally in dairy cheese are also added. So while it contains significantly less fat that dairy cheese, it is arguable in my opinion as to whether it is actually better for you. In addition to all the artificial additives, a dairy milk protein (casein) is typically added to soy cheese to bring it closer in texture to dairy cheese. So if you are vegan, check the label for this additive.
